Ratatouille


Ingredients Yield: 4 People

  1. ½ Red onion
  2. 1 ½ Zucchini
  3. 1/3 Eggplant
  4. 2 cloves of Garlic
  5. ½ Red bell pepper
  6. 1 ½ Squash
  7. 1/3Eggplant
  8. as needed Olive Oil
  9. Salt and pepper to taste

Directions

Cut the zucchini, squash, red bell pepper, and eggplant into small equal sized cubes.

Cut garlic into thin slices

Heat pan with olive oil on medium high heat, adding in the onions to cook to a golden brown color.

Once that is done, add in the zucchini, lightly salting, cooking it to a golden brown color.

Repeat the last step when adding in the squash, bell pepper, garlic, and eggplant in that order.

Slice basil into strips and use as the garnish.
